Huevos Rancheros Salsa: Recipe from Mom & Dad (Judie & Myron) Pearson. In sterile quart canning jars, combine: 3/4 cup diced onions, 1 tbsp finely chopped jalapeno peppers, 1/2 teaspoon of salt, 1 teaspoon of lemon juice. Fill the rest with parboiled, peeled tomatoes (leave 1/2 inch from top). Process jars in a boiling water bath for 45 minutes. Some may leak out during processing. Let cool, untouched until lid "pops" (over night). Depending on the jalapenos, this salsa is only mild to medium heat.
Pearson Huevos Rancheros: Heat quart jar of salsa in a skillet. When boiling, add 2-3 whole eggs per person. Poach eggs. Serve eggs with surrounding salsa on warm buttered tortillas.
